The steam oven is a guarantee when it comes to healthy dishes. The hot steam envelops the dishes and cooks them while retaining all their properties and enhancing their flavor and color.
Since 2019 we have been organizing our Miele Cooking Experience dinners. In these dinners with an informal atmosphere we will have the opportunity not only to taste the excellent dishes cooked by the chefs completely with the steam oven, but also to chat and talk about the product in all its qualities.
During the past dinners, Chef Marco Cristeli showed us how to bring haute cuisine into our homes with the help of the Miele steam oven.

RICOTTA PRALINE WITH FONDING HEART (Miele’s recipe for steam oven)
Ingredients (for 8 servings)
FOR THE DOUGH:
- 250 g ricotta cheese
- 60 g of breadcrumbs
- 25 g of sugar
- 10 g of flour
- 10 ml oil, canola oil
- 1 egg, medium
FOR THE FILLING:
- 150 g dark chocolate, cubed
FOR TOPPING:
- cinnamon powder, sugar
Preparation
- In a bowl, combine all the ingredients needed for the dough and mix. Allow to rest for 30 minutes in the refrigerator.
- Cut out 25 pralines, inserting a chocolate cube inside each one. Bake on a perforated steel baking sheet in the Steaming mode at 100°C for 15 minutes.
- Dip the pralines while still warm in sugar and cinnamon.
- For added flavor, serve accompanied by a raspberry sauce.
- Ricavare 25 praline, inserendo all’interno di ciascuna un cubetto di cioccolato. Cuocere su una teglia forata in acciaio in modalità Cottura a vapore a 100 °C per 15 minuti.
- Passare le praline ancora calde nello zucchero e nella cannella.
- Per un’aggiunta di sapore, servire accompagnati da una salsa ai lamponi.
